Marinated mushroom skewers with peanut sauce

The Swedish TV chef Jessica Frej gives you one of her favourite recipes for BBQ in the summer.

RECIPE – Marinated mushroom skewers with peanut sauce


32 mushrooms

1 dl olive oil

½ teaspoon salt

1 tablespoon dark soy sauce

1 tablespoon rice vinegar

2 garlic cloves

Plastic bag


Put the mushrooms in a plastic bag.
Add oil, salt, soy, vinegar and garlic.
Mix and marinate for at least 2 hours.
Put the mushrooms on a skewer and grill for about 15 minutes, alternating between direct and indirect heat.


200 g glass noodles

1 teaspoon salt

1 tablespoon rice vinear

1 dl finely chopped mint

1 dl finely chopped thai basil

1 dl roasted onion

Put the glass noodles in a bowl and add some salt.
Pour boiling water over the noodles and let them soak for 2 minutes.
Rinse the noodles in cold water.
Add vinegar and the herbs. Mix.
Sprinkle with roasted onion.


1 dl crunchy peanut butter

1 dl whole peanuts

1 dl boiling water

½ tablespoon dark soy sauce

1 tablespoon sriracha sauce

2 tablespoons grated ginger

Mix the ingredients for the sauce.
